Bring the holiday spirit into your kitchen with this fun, shareable focaccia. It’s full of flavour, festive toppings, and a perfect way to balance indulgence with home-cooked goodness.
Ingredients (serves 4–6):Â
250g strong white bread flour
½ tsp salt
½ tsp sugar
1 tsp dried yeast
150ml warm water
2 tbsp olive oil (plus extra for drizzling)
8–10 pigs in blankets
100g prepared stuffing (optional: sage & onion)
Instructions:
Preheat oven to 200°C / 180°C fan / 400°F.
In a bowl, mix flour, salt, sugar, yeast. Add warm water and 2 tbsp olive oil. Knead for 5–8 mins until smooth.
Cover and leave to rise for 15–20 mins.
Roll dough onto a lined baking tray, roughly 1.5cm thick.
Part cook your pigs in blankets and place on top of the dough. Spoon small dollops of stuffing around them.
Drizzle with olive oil. Use fingertips to dimple the dough around toppings.
Bake for 20 mins or until golden.
Tip: Slice and serve as a festive snack or side. Perfect with a simple salad or cranberry sauce.
